Chateaubriand is a classic French style of cooking a whole beef tenderloin. The tenderloin is seasoned, seared and finished to your preferred temperature in the oven. Each guest will be portioned a 6 oz filet portion over a red wine reduction and a rosemary bone marrow butter melted on the filet.
